140g/5oz/1 cup pumpkin seeds ½ tbsp extra virgin olive oil

½ tsp each ground cumin, ground turmeric and ground paprika

¼ tsp fine sea salt

Soak the pumpkin seeds following the instructions on here, then drain and rinse.

Preheat the oven to 50°C/120°F or its lowest setting. Put all the ingredients in a bowl and mix until combined. Spread in a single layer on a large baking sheet and bake for about 1 hour until crisp.

Pumpkin Seed Spread

This brilliant recipe is great on pasta, as a dip with vegetables, or spread on oatcakes, wholegrain or raw crackers. Play with the spices if you want more cumin or some turmeric, sumac or paprika.

Prep: 5 minutes, plus overnight soaking
